Chinese is a written language. Nobody speaks Chinese. For a spoken assignment we need the variety: Mandarin for most mainlanders and Taiwanese, Cantonese for Guangdong and Hong Kong, and then Toisanese, Fuzhounese (Fukienese), Hokkien, Shanghainese or Hakka for the communities that still use them at home. California certifies court interpreters in both Mandarin and Cantonese, and its 2025 court interpreter workforce study lists Mandarin as the second most interpreted language in California courts after Spanish; the Census Bureau counted about 3.4 million people speaking Chinese (Mandarin or Cantonese) at home in its 2019 survey, the largest non-English language after Spanish. The federal immigration courts employ staff interpreters only in Spanish and Mandarin; every other Chinese variety comes through contractors, so tell us the court and the variety and we match the credential. Hospitals that take federal funds must supply a Chinese interpreter at no cost; too often a Cantonese-speaking grandparent arrives with a grandchild doing the job. At USCIS the Chinese interpreter's job is to render, not to help.

Simplified or Traditional is a property of the document, not of the customer. A mainland record is printed in Simplified characters; a Taiwan, Hong Kong or Macau record is in Traditional. When we translate into Chinese we ask which script the reader uses before a word is typed. From mainland China the documents that reach us are the notarial certificate (公证书) issued by a local notary public office for birth, marriage, kinship, no-criminal-record and degree, and the household register (户口簿). From Taiwan it is the Household Registration Transcript (戶籍謄本) from the Household Registration Office, since the National Visa Center stopped accepting Taiwan birth certificates on their own.
The recurring trap is names. One Chinese name can carry a Pinyin spelling on a mainland passport, a Wade-Giles or Cantonese spelling on an older Hong Kong or Taiwan document, and a third version on a US driver's license. We spell to match the passport and note every variant on the original so the officer can connect the records.
